This past week-end I’d the beautiful chance to attend a workshop from the one and only Sandor Ellix Katz, author of the ability of Fermentation (essential checking!).
I was presented with through the workshop, infused with motivation and a mind packed with fermentation a few ideas. However, it cann’t become a hands-on workshop easily performedn’t allow with a jar of bubbling vegetable — a relish of kinds.
The fermenting relish we produced by hand throughout the workshop had many spicy New Mexico chiles1, onion, corn, tomato, sweet potato (prepared), and garlic added to the mix. After getting my arms dirty with blending, mashing, and packaging, I started initially to consider what I’d initially always use this hot mixture on, right after which they came to me personally: hamburgers with brioche hamburger buns!
